- l Responsibility:
- 1. Supervise activities of all Japanese kitchen staffs
- 2. Staff scheduling
- 3. Performance management of staff including discipline
- 4. Involvement in menu and product research and development
- 5. Ensures appropriate health and safety standards, FOODSAFE practices
- 6. Monitors apprenticeship development
- 7. Equipment performance monitoring, may demonstrate use of new equipment
- 8. Inventory management
- Requirements:
- 1. Good understanding English in spoken and reading
- 2. At least 5 years experience in top end Japanese restaurant in similar position
- 3. Must be qualified in all aspects of Sushi, Sashimi, preparation including salad pre. dressing sauce
- 4. Must have good knowledge and good cooking skill in Japanese hot kitchen
- 5. Must have a creative and flexible approach to Japanese and Westin cuisine
- 6. Must be able to bring new idea
- 7. Must have excellent hygiene and health safety practice
